GTA San Andreas (2004) might be a bit of an unusual suggestion, but the world truly felt huge and varied to me, with lots of places to explore (likewise in slightly different ways for GTA4 and 5). Assassin's Creed IV: Black Flag was lots of fun for me, even though I personally don't care for the rest of the series
