I didn't trim mine. It didn't have tons of fat on it. Had a good chunk I was gonna cut off but then Mr. Backseat Chef had to chime in and told me to keep it on there. I'm doing it at 225° bc it doesn't have 220° on the temp settings. It does spike up to 230° occasionally. Stupid Traeger grill. But so far, so good. I just checked pellets and took a peek.
