Mint is a very unique flavour. When you substitute mint for something, it's not because it tastes similar to other herbs, but instead because it fills a similar role.
Sometimes, if you use mint instead of something else, you're just not going to get over the fact that it tastes like mint.
If somebody had a hard time with fresh cilantro or basil in a burrito or salad, I would feel pretty confident recommending mint instead of parsley as a substitute.
