#TIL having to large of a bowl makes brûlée-ing the crème take very long, unless you have a big torch (as posted previously).

I also learned: A heat gun counts as a bigger torch. Might not be the cleanest result, might need a different head, but it was certainly faster. Though you might want to start witht he torch to melt the sugar, otherwise, the sugar might go flying.
