I view the restriction of the Gemini file format as a good feature. See the past discussions on the Gemini list. Markdown invites extensions, and extensions lead to the Web we already have. Gemini is simple on purpose.
But if you want to serve Markdown text, the Caddy Webserver (https://caddyserver.com/) can render markdown files “in-the-fly” into simple HTML.
