Seems I was just a bit of a Reality Composer Pro noob! Put all USDZ in one scene, load parent scene, but in code only add one sub-entity to scene, then you can load in other sub-entities (without adding them to scene) to use as animations. 🪄
As for why not just continue using individual USDZ files in project, Apple recommends using Reality Composer Pro instead as it allows for more efficient loading. Per my simulator testing seems to be 2-5x faster to load versus individual files
