The journey to more plants and less meat continued today with a broccoli-lentil quiche. A lot of randomness went into it. I had no milk or cream, so I used my homemade yogurt. The cheddar I thought we had was gone, so I used manchego. It came out all right, though of course the most delicious part is the crust, as always.
