Having taken out most of the sofrito, I've now added in the remains of the pork - roughly 200g - along with some tomato puree, chicken stock, a dash of white wine to deglaze the pan, and some chopped sage.

I *think* I should get 3 portions from this, working on 150g of sauce per portion (assuming serving with pasta, in this case)
