Final dish using the leftovers - Tuscan ragu.

First things first, I'm going to batch up a few portions of sofrito.

Roughly equal quantities of onion, celery and carrot, chopped very finely (I used a food processor), and very gently sweated in olive oil.

I've added garlic, rosemary, bay leaves and some home-cured bacon, but these are nice-to-haves.

Basically, sweat it for about 10-15 minutes, or until the "brightness" of the carrot has worn off.

I've deliberately done more than I need, mainly because I had celery that won't get used otherwise, so I'll freeze what I don't use today for future use. It's used in a *lot* of Italian dishes, from soups to stews to ragus, so it's always handy to have some in the freezer! If you're going to go to the effort, making extra is never a bad thing if you can.
