So one of the hard drives is just plain old fucked. The head is scraping loudly against something whenever it moves and absolutely nothing is accessible.
The second one has a readable header but it just stalls forever when I actually attempt to mount it. I don't think it's a software or corruption issue but I'm going to attempt to run repair tools on it even though I'm not hopeful.
I just had two expensive disk failures in the same night. Such is life. My life, uniquely, apparently
