Take a slices of liver, cut it like ragu, take some oil and roast it shortly all around, sprinkle a tbl spoon flour, maybe from a dark full grain if possible, turn liver again until it smells like bread, deglaze it with a little bit red wine (if possible or a few tbl spoons of water)+1 tbl spoon vinegar+sumac+kardamom+kurkuma+salt dissolved in the wine/water

Turn down heat and let it simmer until it forms a brown sauce.
