One thing that helps me with constant FOMO and shiny new thing syndrome is to just make a specific time commitment to a piece of technology. I say to myself "I'm going to commit to using this framework/editor/etc. for the next 12 months, and then I'll look around and reassess." During that year, an unbelievable amount of churn happens, and things that were tempting me no longer pull so strongly. In the meantime, I learn the tool I've committed to more deeply, and tend to appreciate it more.
