I always grease my pans, but what I use depends on what I'm cooking and how hot I want to cook it. Also, cast iron or carbon steal skillets make the food taste better. I don't know why, but it does. At lower temperatures I use butter or coconut oil (more often butter unless I don't want the butter taste for some reason). At higher temperatures I use ghee, lard, or beef tallow. For what it is worth I also use half & half wagyu beef tallow and organic leaf lard to make a body cream that is too die for. I also add a small amount of jojoba oil, sea buckthorn oil, & essential oils. Not what you were looking for, but just an FYI.
