For northern hemisphere folks, cows have been or will be soon back on pasture. The flavor that grazing contributes to milk quality can't be overstated. Real ("raw") milk doesn't even compare to the white water you buy from a middleman.
Our diets have become way too sterile for optimal health. Transitioning to real milk is a gradual process because your gut microbiome needs to upgrade. It took me a good 6 months of stomach discomfort to acclimate to real milk.
