yeah that's a bit misleading but the highlighted paragraph is the important one :) i.e. you "store" the kek information on another system: the user's brain, and generate the kek from that.
this is also what FDE on linux uses (LUKS). there you can have multiple password slots to unlock the actual data on disks, which can be used with passwords or pass files (e.g., to unlock via a use stick instead of a password).
