Oh man, I loved growing them so much. Probably the quickest and easiest was any kind of radish. Radish types we grew were China rose, daikon, rambo red (which actually comes out a beautiful dark purple color). Sunflower was another easy AND tasty one, except the seed hulls don't come off as easily. Twas a bit time consuming to get them off before consuming, but so worth it. We learned a ton of useful techniques from the watching On The Grow on YT.
