Behold one loaf of beginner sourdough (a) just out of the oven, and (b) on the cooling rack. Must let it cool before cutting. So much technically wrong with this loaf, but *I* *don’t * *care *. There are so many rules and methods and ways on the Internet to make sourdough, and (as with so many things in our modern world) this drum beat towards perfection, diminishes the fact that breadmaking is intended for subsistence, not trophies and fame.
