We learned most of what we did from On The Grow on YouTube. I used the same knife they suggested. gently hold the tops of the greens in my left hand and cut them close to the medium, but not too close with my right. we were not washing them, but i would now. they last longer if their washed and then dried in salad spinner but we were trying to minimize the processing on our end. we would just tell our customers to wash before consuming.
