Main markers would be digestion, stress tolerance, well-being, energy, body warmth (extremities should always be warm), sleep. A strict food diary, at least for a few weeks/months, can help to see how you react to specific food. And sometimes it doesnt even come down to the macros but other stuff. Example: you're reacting to potatoes with worse sleep, inflammation and other issues but not to sweet potatoes. In that case it's because potatoes are nightshade plants whereas sweet potatoes are not.
