Good point- while it's easy to be critical to the major flaws, it's a lot harder to see the incredible baselines we have. I agree we need major improvements in all these categories, but I don't think it's beyond fixing.

Look at how quick the narrative from seed oils to tallow / more healthy alternatives has happened. It's not a massive change but it indicates that people are willing to improve when given a better alternative.

We need better alternatives across the board that aren't going to break the bank so it becomes easy to transition out of outdated ways.
