You can use everything other than Digital Wellbeing on GrapheneOS because that requires a significant amount of privileged access. It's possible it could be coerced into working via messing around with ADB but unlikely.

Every app should work on GrapheneOS if it's not a very special Google app designed to be built into the OS and isn't disallowing using an alternate OS via Play Integrity.
