npub1r6cdysha8k4kx9n2jmr534nzxjhe0nxgdth4m5uznajcwehr99rs2jul6f (npub1r6c…ul6f) You need jars that have the vacuum seal type lid eg. Pasta sauce jars 1. Peel tomatoes, chop and pack in jars leaving about 1cm space at top. 2. Put lids on, but loosely so steam can escape. 3. Put a folded teatowel in the bottom of a big pan and stand jars on it so they're not touching. Add enough water so it's about 2cm from top of lids. 4. Bring water slowly to boil and simmer 30 mins 5. Lift jars out of hot water and tighten the lids.
When the jars have cooled down, the "button" on the lid should have sucked in, forming a vacuum seal. If it hasn't, try again.
Properly sealed jars of fruit keep for years.
