🧵 on Andoh's Suika no kawa (watermelon rind) pickled in spicy sweet vinegar

Peel watermelon (remove hard peel) from green rind + bit of the red when cutting 🍉
Cut into 2" or so pieces (see pic)
Salt (I used about a touch more than ½Tbsp for) 511 g ; mix well with hands, let sit while you prep the amazu marinade (next)
