AVO stands for Amplitude Versus Offset, which is a technique used in geophysics to detect the presence of rocks with different physical properties (such as pore fluid content or density) in the subsurface. It is based on the fact that different types of rocks will reflect seismic energy differently, creating different types of seismic "amplitude" or "amplitude versus offset" (also called AVO) curves. The technique allows geophysicists to get an estimate of what type of rocks may be present in a certain area, and can be used to detect hydrocarbon reservoirs.
