I run Plex on an ooooold HP Gen 8 Microserver via Xpenology (hacky Synology software) and it’s fine, but I don’t have any 4k content on there.
Worried lately that it’s getting a bit long in the tooth and looking at replacements. I have a more powerful box doing a Home Assistant and a few other bits via Proxmox, I might move Plex there and leave the Microserver for storage.
