As you suggested I watch a video by Dr. Ken Berry: I Was WRONG About Veggies (Plant Problems) 2024.
Here are some of my thoughts:
Too many carbs and fibers
He thinks that for some of us vegetables contain too many carbohydrates and fiber. He doesn't explains who the "some of us" are, why thy are a problem, what digestive problems they encounter, and why those people might want to consider his challenge.
He is addressing a small group of people who have digestive problems and "weird inflammation* that they can't get a handle on. Those people should not do a challenge online, they should visit a doctor. They need personalised care from a healthcare professional.
Antinutrients
He says that vegetables are full of vitamins and minerals, but the problem is that they are not bioavailable. The reason is that plants contain antinutrients (phytates, lectines, oxalates, ...).
He doesn't mentioned that those compounds are present in such small quantities that they're unlikely to harm our health when eaten as part of the whole food — compared with eating them as a single compound. Or that cooking significantly reduces the levels of those compounds. Or that they there are research being conducted on their possible health benefits including slowing the progression of cancers, reducing inflammation and protecting against infections.
Inflammation
Polyphenols are a group of compounds found in plants. They boast a wide range of health benefits, thanks to their antioxidant and anti-inflammatory properties.
Having a reaction to one plant doesn't mean all plants consumption should be stopped. Is the reaction due to a allergy or intolerance? If it's an intolerance, find out how much you can eat without triggering a reaction. Slowly increase quantity overtime. Again work with a professional healthcare provider, don't do an online challenge.
Because some people have a reaction to a specific food doesn't mean we all have to stop eating plants. And saying that plants is the reason for the symptoms with medical investigation is pointless and dangerous.
With a carnivore diet you are missing out on health benefits of plants.
The gut microbiome is important for human health: digestion, metabolism, hormones, mood, brain health, immune system, energy levels.
The gut is home to 70% of our immune system.
Fiber is the preferred food of microbes in our gut. They break down the fiber and produce short-chain fatty acids, which are potent anti-inflammatory compounds that have healing effects on the body.
Plants contain a wide variety of healthy compounds like polyphenols. These act as antioxidants and have anti-inflammatory powers.
Animal products don’t contain fiber or polyphenols.
