I just ran some basic tests and here's what I can conclude...
The MP3 file may be getting created without a proper header and only containing frame data.
If I open in VLC, it doesnt play. But if I open in Audacity, it seems to work. Similarly, I can take an MP3 created and stream it back to the room and listen to it.
What software have you tried it with?
You may need to find one that works for playback, and then resave as part of post-processing
