I recommend the relay created by Cameri, it is very easy to install.
https://github.com/Cameri/nostream
Once you have docker installed, you clone the repository with:
git clone https://github.com/Cameri/nostream
You go into the nostream folder and as easy as running:
./scripts/start
If you want it in Tor:
./scripts/start_with_tor
