leftovers are part of the tradition. you haven't had Thanksgiving if you're not eating the turkey for at least 3-4 days after.
my fav use of leftover turkey (esp if it was smoked) is turkey salad with celery, red grapes and an insane amount of homemade mayo. Sadly I did not attend a Thanksgiving dinner this year, so I have no leftovers to slather in mayo. :)
