Today I am making port, which is a red wine fortified with alcohol and sugar to make a sweet desert wine.

I prepared the ingredients a while ago, and you can see here some sugar syrup and a gallon of 150 proof vodka


I will put this into a demijohn along with the red wine that I have been fermenting for 2 years.

Once it is all in the demijhon, I add some toasted oak staves that I previously used for aging bourbon, and it's now ready to sit there for a while.

I prefer tawny port, which means this will sit now for about 5 years before it's ready to bottle.
