Being a nutritionist and a carnivore, I have often been asked for my view on fermented vegetables.
Fermented vegetables contain probiotics and prebiotics that can support the growth of various gut microbes - unfortunately not just beneficial bacteria, like Lactobacillus, but also potentially harmful bacteria or yeast, such as Candida, depending on an individual’s existing gut microbiome.
Dysbiosis, an imbalance of gut microbes, and fungal overgrowth are conditions that can exist without clear symptoms, and fermented foods might exacerbate symptoms in these cases, such as bloating in people with small intestinal bacterial overgrowth (SIBO) or histamine intolerance.
