Joplin is an Open Source note-taking application that can handle a large number of notes organized into notebooks.
Evernote users can even import their notes.

I have a FLOSS Joplin app in android that I sometimes use as a scratchpad. set it up to backup to my NAS box over WebDav. Backs up to clouds too.
I'm also looking at a FLOSS Orgzly app as an alternative.
