Q: How would a user find a list of possible renoters to use?
A: That's still an open question. But since renoters are regular accounts in nostr, they might use some tag in their kind-0 events (user metadata events), or even create some special kind of event just for announcing they are renoters.
Q: Would we have to differentiate between guard nodes and exit nodes as well in this case?
A: No. Renoters always perform the same operation: read a giftwrapped event addressed to them, unpack and drecypt it and post it to as many relays as possible. It's the client reposnsibility to choose the order in which the renoters will be chosen by gift wrapping notes in the correct order. The renoter does not need know its place in the chain.
The client has to know beforehand all the renoters it will use and decide on the path the message will follow.
