Yes, really good to keep both of these principals (re: UTXO-size) in mind, and then be willing to adjust based on what happens with the state of fees and BTC price.
This can always be fixed/adjusted by sending whatever sized 'chunks' to a new wallet. You might just incur more fees than you'd like if things go crazy on the fee side of the equation.
I've always suggested 0.005 - 0.01 BTC, but a lot of people think that's too small. Most haven't considered the point you're making here on the privacy side if BTC goes way higher... and I'm still not convinced fees will go astronomical.
