Tonight I made the meatloaf from Diane St. Clair's THE ANIMAL FARM BUTTERMILK COOKBOOK. Of course being scatterbrained I didn't calculate the nutrient values until after I finished all of the prep work (it's in the oven now), and it turns out to be right around 600 kcal per serving, which means I'm going to be well over my target for the day. (If I had planned better I could have had a smaller lunch.)
