I think amazon can get away with it because they have relatively few videos that be modified and then broadcasted out. For youtube there's targeting and I would think that would be a massive amount of processing and storage that would make it even less profitable.
There is also the obvious concern of "youtube is now directly editing my video without my permission" but let's face it normies can't wrap their brain around that one.
