For native apps not much, for web apps they need to talk to relays so the privacy is the same as any client.
By default I fetch your profile data to get the account name and picture from relay.Nostr.band and purplepag.es but you can change it
The default relay to talk to nip 46 apps is relay.nsec.app
You can change it too. I usually use citrine for the applications relay and use relay.nsec.app for the other apps that don't work with local relays
There's a option to use the orbot proxy too
