I started using profiles when I wanted to separate browsing data.
Nowadays a browser profile is more like a "work environment" (work vs. private, larger projects, etc.) to me. Within a profile I have specific plugins and bookmarks, browsing history, etc. which is specific to this environment.
I could probably do this with QubesOS, but I never got it running on my machines. 😉
