As someone who knows a lot of Judaism, id argue that Jews often misrepresent their religion as an ethnic category when historically it hasn't been the case. This is one of many reasons for weird DNA testing and historical revisionism in Palestine. Furthermore the treatment of Arab and Black Jews further demonstrates the separation of race from "ethnoreligion".
When it comes to conversions Jews believe that a convert was actually a crypto Jew who found their way home, even if there is no genetic ties. It's all a sham.
