I managed to find an alternative to Postman, Insomnia etc. which hasn't (yet) gone down the paid / cloud route.
It is called Pororoca and is cross-platform, though there's no Snap (something I need to look into as lots of projects I use don't have Snaps, and I'd like to change that).
