The older I am the more I appreciate Nigella Lawson.

I slowly and unwillingly came to acceptance that I won't be making every single dish with pedantry.

I still make a mirepoix, I still do equilibrium brining... but sometimes I use apples or whatever veg I have instead of sticking with the holy trinity; and the 72 hours schedule is slowly drifting towards a week.

Pragmatism is taking over.
