The relationship is also more fleshed out in the book but I think in general Lector just enjoys toying with people, showing off his superiority, but he respects that Clarice isn't stupid and could see through some of his tricks like "Louis Friend", so it's more amusing for him to leave her alive.
You should watch Manhunter, from the 80s, directed by Michael Mann. It's an adaptation of Red Dragon which is the book that precedes Silence of the Lambs.
