For the underripe plums, if they don't improve much, I suppose you could try a jam or plum sauce.
But I don't have much advice on helping them ripen on the tree. Most products you see in the gardening catalogues are to protect fruit from birds (e.g., netting or scare-crow owls & stuff). Not sure what would work against squirrels.
