extraordinary claims demand extraordinary proof.
If someone is claiming a piece of sand thinks or is intelligent, which would be extraordinary, it is reasonable to demand actual strong proof of that. "Walks like a duck" is not such a proof.
It's true that we don't understand enough about what does "to think" or "to be intelligent" mean. But if we don't understand that, we also cannot prove that a piece of sand "thinks" or "is intelligent". After all, what would we be proving?..
