Fun fact: The idea behind blade-sharpening (ANY blade) isn't to actually grind the metal down like you would a pencil, but rather, make the sharp edge of it more even/consistent. Dullness happens when that edge gets all borked up and uneaven or has debris stuck on it.
A whetstone sort of cleans and "flattens" the edge out as you stroke the blade across it. Some metal might flake off, but for the most part, it'll clear off the junk that has accumulated on the edge.
