Most vegetarian meat replacements are trash.
I had a seaweed burger in Amsterdam some years back and it was great. The texture (which is often a problem) was a bit like fish (flakey, if that makes sense).
IMO, if you're going to be vegan or vegetarian, the best approach is not to try and replace meat with highly processed vegan alternatives.
Instead, eat freshly made food from real, raw ingredients. Asia (India and far east) has some amazing vegetarian/vegan dishes.
