OMEMO encryption is the end-to-end part that's on the user's device, while the "user@domain.com" is the server-part.
This is an example of an OMEMO "fingerprint":
zf5820fc2fb5ea45db378ed5e7291ghjbe5c9adbe4389386a288c3383e1a8506
That fingerprint is who you are since it's on your device and can't be faked. The username and domain parts can be faked on the server against your will.
But XMPP does not allow you transfer your OMEMO fingerprint to a new domain. (change servers)
