best advice I can give you is velveting. a lot of people don't know but if you coat cheap cuts of meat in baking soda for 30-45 minutes then rinse it off and pat dry. it'll soften the tissue up so you can pan fry it will still be tender and not dried out. chinese use this trick for all their meats and it's the best tip not only to save cash by buying economical cuts but also because it makes it much nicer overall
