Have you always wondered what would happen if you make buttermilk biscuits, but leave out the baking powder?

No? Me either, but I did it anyway! 🤦‍♀️

So I realized something was up when I went to swap the upper and lower trays for even browning, and discovered that
a) none of the biscuits were even starting to brown
b) none of the biscuits were rising at all
c) every biscuit was sizzling on the bottom, as the butter seemed to be melting instead of incorporating

So I let them "finish" (ie, continue until they seemed appropriately browned) and took them out, just so I could complete the lesson I had inadvertently begun teaching myself. They were overcooked on the edges, burnt a bit on bottom, and yet not completely cooked in the center.

So there, I have mistaked you don't have to!
