I've had a blast sailing Hobie Cats in lakes. They would be easy to make with the "stitch and glue" method. It's basically tying shaped pieces of plywood (using wire or zip ties), then using fiberglass and epoxy to hold it together. It's essentially a fiberglass boat with a wood core. A dinghy can be built in a weekend.
